Gluten-Free, Dairy-Free Banana Bread aka PALEO – Monday Made

Here’s a Paleo recipe I found last week but now I can’t find the original source. I just have some notes scribbled in my notebook about it……

One of the notes is about how to pronounce the word PALEO. Is it  PAH-LAY-OH? Or is it PAY-LEE-OH? Does it even matter?

I guess the more important question: What is Paleo?

Well, it is SO HOT RIGHT NOW. It is an eating ethos. A diet that looks to our ancestors for it’s rules. Paleo is actually short for Paleolithic and is often called the Cave Man Diet. Which sounds hilarious. You can go HERE to read more about the exact details, but I have borrowed a food pyramid that illustrates it basically. Note the complete absence of grains.

This “diet” (jeepers, I really hate that word), seems to be sort of what I eat already. I have, over time, figured out that my body is not a fan of dairy and wheat. I try not to eat them much, but I really like the taste of dairy. I’m always looking for ways to not eat dairy.

A book I have been reading for food inspiration in my quest to try and keep these foods out of my diet without then adding in crappy, man-made substitutes is Lola Berry’s 20/20 Diet. It has an atrocious name. I’m not looking to lose 20 kilos in 20 weeks like the title suggests, I am just interested in nutrition. If I dropped a couple of these extra kilos that crept on over the winter and were encouraged to stick around by Christmas, then that’s good too.

Enough about that, here is the recipe…it’s really yummy. Did I mention low-carb and sugar-free?!

What you need:

  • 3 eggs, separated
  • 5 tbs honey
  • 4tbs oil (I used olive oil because I ran out of coconut oil)
  • 2 bananas
  • 1 tsp vanilla (I used half a vanilla pod)
  • 1 tsp baking powder
  • 2 cups almond meal

What to do:

  1. Pre-heat oven to 180degC (160 fan forced). Grease and line a load tin.
  2. Mix thoroughly the egg yolks, honey, oil, bananas in a food processor or blender.
  3. In an electric mixer, whip egg whites until they form stiff peaks.
  4. Add the almond meal and baking powder to the banana mixture, then slowly incorporate it into the egg whites. Don’t get to excited with the mixing or you will undo all your good work with the egg whites.
  5. Pour into the loaf tin and bake for 40-45 minutes. Keep checking after about 35 minutes to make sure you don’t over cook!
  6. Enjoy with relatively little guilt.
